🧂 Ingredients

For the Ramen Buns:

  • 2 packs instant ramen noodles (any brand, no seasoning)

  • 2 large eggs

  • 1 tbsp sesame oil

  • Salt & pepper, to taste

  • Cooking spray or oil (for frying)

For the Chicken Patty:

  • 1 lb (450g) ground chicken

  • 1 tbsp soy sauce

  • 1 tbsp hoisin sauce

  • 1 tsp garlic powder

  • 1 tsp grated ginger

  • 1 green onion, finely chopped

  • ½ tsp chili flakes (optional)

  • Salt & pepper, to taste

Toppings:

  • Lettuce or shredded cabbage

  • Sriracha mayo (2 tbsp mayo + 1 tsp Sriracha)

  • Pickled cucumbers or kimchi

  • Fresh cilantro (optional)


👩‍🍳 Instructions

🔹 Step 1: Make the Ramen Buns

  1. Boil noodles according to package instructions (do not use the seasoning).

  2. Drain and let them cool slightly.

  3. Mix noodles with 2 beaten eggs, salt, pepper, and a little sesame oil.

  4. Divide noodles into 8 equal parts.

  5. Press each portion into circular molds (use ramekins or small bowls lined with plastic wrap).

  6. Chill in the fridge for 20–30 minutes or freeze for 10–15 minutes until set.

🔹 Step 2: Cook the Chicken Patties

  1. In a bowl, mix ground chicken with soy sauce, hoisin, garlic powder, ginger, green onion, chili flakes, salt, and pepper.

  2. Form into 4 patties.

  3. Heat oil in a pan and cook patties for about 5–6 minutes per side, until golden brown and fully cooked.

🔹 Step 3: Crisp Up the Ramen Buns

  1. Heat a skillet with oil or nonstick spray.

  2. Carefully remove ramen buns from molds.

  3. Cook buns over medium heat for 3–4 minutes per side, until golden and crispy.

🔹 Step 4: Assemble the Burger

  1. Place a ramen bun on the bottom.

  2. Add lettuce/cabbage, the cooked chicken patty, Sriracha mayo, pickled cucumber or kimchi.

  3. Top with cilantro and the second ramen bun.
