For the Chipotle Mayo:

1 chipotle pepper in adobo sauce (finely chopped)

Make the Chipotle Mayo:
In a small bowl, mix mayo, chipotle pepper, lime juice, and garlic powder. Chill in the fridge until ready to serve. -
Prepare the Burger Patties:
In a mixing bowl, combine the ground beef with chili powder, cumin, paprika, cayenne, garlic, salt, and pepper. Form into 4 equal patties, slightly larger than your buns (they'll shrink when cooking). -
Grill or Pan-Fry:
Heat a grill or skillet over medium-high heat. Cook patties for about 4–5 minutes per side, or until desired doneness. During the last minute, place a slice of pepper jack cheese on each patty and cover to melt. -
Toast the Buns:
Lightly butter the buns and toast them cut-side-down on the grill or skillet until golden. -
Assemble the Burgers:
Spread chipotle mayo on the bottom bun, layer with lettuce, burger patty, avocado slices, red onion, jalapeΓ±os, pico de gallo, and cilantro. Top with the other half of the bun.
