π Instructions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C). Lightly mist a baking sheet with nonstick cooking spray π₯.
2️⃣ Prepare Patties
In a large bowl, combine ground chicken π, panko π, chipotle chili powder πΆ️, cumin πΏ, garlic π§, cilantro πΏ, lime juice π, and salt π§. Mix gently until just combined. Divide into 4 equal portions and shape into patties π. Place on the prepared baking sheet.
3️⃣ Bake Patties
Bake for 15 minutes, or until fully cooked (internal temperature 165°F).
4️⃣ Make Chipotle Mayo
In a small bowl, whisk mayonnaise π₯, adobo sauce πΆ️, and lime juice π until smooth.
5️⃣ Warm Buns
Place burger buns in oven during last 2–3 minutes of patties cooking time to warm.
6️⃣ Assemble & Serve
Spread chipotle mayo on bottom bun. Add patty, then top with avocado slices π₯, pickled jalapeΓ±os πΆ️, shredded lettuce π₯¬, and cotija cheese π§. Top with bun and serve immediately.
